I know that they have smurfette, but she was only turned into a female in the 2nd episode. How did they reproduce before then?

I think they have a secret smurf enclosure in smurfland where they reproduce and hide their young to protect them from tv producers. Smurfette was a plant to prove to the world that they're real.

Papa Smurf created all the smurfs. There is a good discussion of reproduction/sexuality of smurfs in the movie Donnie Darko. I suggest you watch it. Donnie concluded that smurfs are asexual. I think his explanation in the movie was good.

The cartoonist just drew as many as was needed and will draw more as the show needs more. This is a cartoon for kids not real life.
