I think, but I am not positive.sorbet has milk in it and sherbet doesn't.

The difference between sorbet and sherbet is that sherbets contain milk or another fat, making it similar to ice cream. Generally thought of as being fruit based, sorbets can be made with any ingredient.
Sorbets are technically ices (as in Italian ice) and are also referred to as granitas. They were actually the first iced dessert, probably having been invented by the Asians and then introduced to the Middle East and Italy. They are generally granular in texture where sherbet is creamy as a result of the added fat.
The smoothness of a sorbet is also dependent on the secondary ingredients because of how they can change the structure of the frozen recipe. More or less sugar or alcohol or even the amount of water will make a big difference in the texture of the recipe.
Technically,The word sorbet is really just the French translation of the English word sherbet (often misspelled sherbert). Both words (and the Italian sorbetto) are derived from the Turkish sharbat, a sweetened frozen fruit drink. Over the years, however, sorbet and sherbet have come to mean different things in North America.
Today, sherbet contains egg whites, milk, or gelatin (or a combination) to give it a creamy consistency, while sorbet is made without gelatin, eggs, or dairy products (though it may have pectin or vegetable-based thickeners).
The changeover to sorbet started a decade or so ago when savvy marketers started using the French word to refer to new, upgraded, gourmet ices made with more attention to flavor and texture.
