I am wanting to know why after a certain time the water begins to smell boggish or like sewage.

Trees get their carbon from the air and take very little nutrient from the ground. Something else growing in the water makes it smell bad.
I got the book "Gardening for Dummies" to help with with these matters; I used to have a pretty good kill ratio with new plants. I have significantly reduced my kill ratio using the book, so I recommend it.

Pour drainage in the area they are planted that why it smells if these are indoor you need to drill holes in the bottom of the pot and put a pan under it. They get nutrients just like any other plant the exorb it from the soil like a sponge Bamboo takes a lot of water but too much just causes rot>

The water needs to be changed, I'd do it twice a week, as the plant takes all the oxygen out of the water. I'll also toss in a weak dilution of soluable fertilizer.

Secondly, I suspect what you have is "lucky bamboo", which isn't really a bamboo at all; it's variety of dracaena which is actually a member of the lily family.
