for starters the 1600's are not the medieval time period this was the high and late Renassiance. at this time period clothing would have been typical eurpean rensassiance styles.

look up the Society for Creative Anachroism

theyare a medieval reconstruction group and have documented many authentic medieval clothing styles right down to the fabric used. the weaving technique the proper loom to use. the proper width that the fabfic could be woven at and the proper way to make a bone needle and to spin your own thread to make the authentic garb.

Basically go to an art gallery and look at portraits of 17th century Irish folk.
I am sure Osprey http://www.ospreypublishing.com/ will have a book on the Irish army in the seventeenth century and all their books have lots of full colour pictures.
