If our orgranization is struggling with our profitability, how can I legally let the staff know this information without breaking any labour or human rights laws?

You will have to direct that question to your lawyer. He/she will know the answer right off the bat.
We are a new little company and I've made my fair share of bad calls, I now talk with the lawyer first and then I answer whatever it is that I need to.
Sorry to hear you're having troubles, maybe do a morale boost and a competition and see if the employees can help get you going again. Sometimes it's that little edge that they need to help you go further.

Call a corporate meeting and be like "We're crashing and burning, folks. Tell your kids not to expect gifts for christmas."

Ours doesn't let us kmow at all. They just post it on their website and if we are interested we look it up
