well, it is actually based on the story of Hua Mulan. Obviously, the Disney movie changed the story with the cricket and mu shu, for example.
one way it showed chinese culture, was how mulan was dressed up so that she may find a husband. later in the film, she disguises herself as a man to fight in her father's place. obviously, here, women were not allowed in the army.

Chinese History - Genghis Khan (The bad guy in Mulan)
beliefs - beliefs in ancestors, ancestor worship, some proverbs mentioned in the movie (Confuciusm and taoism)
Culture - the clothes, the wedding ceremony, the whole "honor" thing

I'm not exactly sure but I do know it's supposed to be about the war between the Chinese and the Xiongnu of Mongolia at about 209 BC.
