There are plenty of actors like that. Most of them play not lead roles, but side or secondary roles.
The problem is that until they make a lot of money, the top actors don't catch the media's attention. You will never find a "starving artist" to be a Hollywood heartthrob.

That would be nice, but since the bottom line drives everything, it is less the actor and more the studio that would support such a project.
