MY DAUGHTER AND HER FRIEND MY DAUGHTER CAN DO SOMETHING WEIRD WITH HER ARM AND HER THUMB AND HER FRIEND CAN TAKE HER RIGHT POINTER FINGER AND BEND IT BACK TO HER ARM.

The term refers to individuals (that is, their particular joints) that have an unusually large range of motion and the attached ligaments, tendons, and muscles that have unusually large flexibility and extensibility. In short, its not the number of joints but the range over which the joints can rotate.
Some people have very flexible joints. Hyper extension refers to the over extension some people have in their joints. You see it quite often in elbows and knees. The arm or leg will go beyond straight and hyper extend.
