First, Anne Rice is a native of New Orleans, so she's writing what she knows.
Second, New Orleans is a melange of cultures, a feature which provides lots of backdrop for mumbo jumbo.
Then there's that whole Southern Gothic thing which especially overshadows artistic depictions of New Orleans.

It's easier to set a story in a place where you can accurately describe it, other than some foreign place.
Anne Rice lived in New Orleans for a while, so Interview with a Vampire was set there to make the story more life like. Also, Orleans is the setting of The Feast of All Saints.

i did not comprehend Anne Rice grew to become into from New Orleans. I had assumed it grew to become into to do with the belief of the eu impacts there and the undeniable fact that this is have been given the attractiveness of having a depressing supernatural area (with voodoo, and different non-monothesiastic religions having been practised there, which the Catholic church termed as satanic - as they did with all previous religions that have been not Christian) which might have given the region a volatile and somewhat frightening image to those greater at present day-laced Christian types.

Anne Rice lived in New Orleans for many years, and loves the city.
You will notice that she sets things in San Francisco too. That's because she has lived there too.
They always tell writers, write what you know!

New Orleans is a city that is filled with modern day vampires. There is like a whole sect. of them that actually drink real blood!!! The author is from the city. There is alot of occultism in N.O. Voodoo, Hoodoo, you name it. Also, the architecture had the right feel to it due to some its gothic appearance.
