The rule, as always, is to stay away from those that ask you to pay before you can get these surveys.
Legitimate market survey companies such as Pinecone Research recruit members based on demographic characteristics -- e.g. mothers of babies 0-12 years old -- and will send surveys of products and services targeting this demographic group. Pinecone Research, however, pays only $5 per survey -- you're definitely not going to be rich with that. They can give you anywhere from 1-5 at most surveys in a month.
Other companies simply ask you to answer as many research as possible, and you don't earn anything just the chance to win at a raffle (which I find lame).

I have been doing surveys for over a year now and making a good extra income!. Thing is that you have to find the right site to get involved with and never pay to be a member. Legitimate sites get paid by survey sponsor and give a certain amount of that money to the active members of the survey sites! Check out the link below that I found from a similiar question on Yahoo Answers!!

I've listed some of the sites I have taken surveys through and actually been paid (or recieved other rewards like gift cards or CDS) on the following site, if you are interested:
http://www.windhavenweb.com/surveys
I list how they pay you, what I like and dislike about them, whether they have an affiliate or referral program, etc.
There are others out there. Be careful though, there are also scams. Don't sign up for any survey site which asks you to pay to access the surveys. Also watch for language like "get paid for taking surveys AND SIGNING UP FOR OFFERS" if you don't want to have to sign up for stuff with other companies to get paid.
Always carefully read their terms of service and privacy policy. If in their privacy policy they say they only use aggregated info, this is GOOD SIGN they are legit. Aggregated info information that is grouped together so it can't be connected with anyones personal identification like name, e-mail, phone or address. That's what survey sites SHOULD collect. Avoid sites that say they give, rent, or sell any personal information (info that is not agregated) to third parties (unless you really don't mind getting junk mail, telemarketing calls, and spam).
Also just recently came across a good survey ratings site that I've found very helpful:

Most of them are scams, but I have been paid in the past. I couldn't tell you which companies have paid me, unfortunately, but I have been paid. Its really not worth it. You get like 1-4 dollars a survey and you are lucky to get 1 e-mail a month.

There are some real ones out there. GoZing is for real but you won't get rich, just the occassional $1-5 payment if they choose you for a survey. The read email type sites, some are for real but the trick is to read the fine print. The way it works is they set a high minimum payout like $100 so most people quit after making like $20 and so never get any payout but the person running the site still gets referral payout.

I've never tried them before but I believe most of them have a minimum amount required before you can get paid. I.E. $20

There are several legitimate sites such as Lightspeed and mysurvey.com but they're not worth the time, other than helping companies know what consumers want.
