If it is mildly salty..& you can eat it..Mention it to the waiter afterwards.
But if it is so salty that it has ruined the flavor of your meal, most defanatly send it back.
I don't know if the cook would be mean enough to tamper with it. I work at a restuarant and if we get a legamit claim, I take it seriously and correct the problem right away.

Tell the server, they will get a manager, they will explain that everything is salted the same, meaning that they have exact measurements that they have to follow, or they will apologize and offer to bring you a new or different item. It is your choice on what you want to do. The server may just offer to have the food re-cooked for you, and if so ask them to not season the food because you are watching your health, smile, and then salt or season the food yourself. I personally have found that so many restaurant do over salt their food. Why? It does not need all of that salt to be good. If you are nice to the food server they will take care of you, don't worry about sabotage or anything like that. Now if you are being rude by sending the food back over and over again, well then yes, I might worry about sabotage.

Politely send it back. If it is too salty it needs to be remade. Tell them how sorry you are to send it back and how much you were looking forward to the meal. By doing it in a non threatening way nothing bad should happen at a restaurant that is reputable.
You should be able to access your local health departments ratings of all the restaurants and delis and such are public records.
Good luck.

Quietly and politely point out to the waiter that the food is too salty for your taste. In a good restaurant you will get a new plate of food with no problems.

If you're eating at a respectable restaurant, just send it back. I'm sure the chef would appreciate being aware he is oversalting the food.

When you order it, ask for it unsalted, and then salt it yourself at the table - then no one gets mad.
