If I need to copy onto a cd-rw again will the new copy overwrite the first copy?
If it does, how can I copy onto a cd-rw incremently? Or is this not possible?

No - You can append/add data. You should basically just be able to drag and drop to the CD to add (that would be incremental).

A CD-RW is like a floppy disk, you will be adding to not overwriting the first copy. Unless you wish to wipe out the first copy, and put on the second. I don't know how about the incrementally thing.
