Crocodile River-South Africa: open pit mine;
Falcondo-Dominican Republic: open pit mine;
Messina Platinum-South Africa: underground mine;
Murrin Murrin-Australia: surface mine;
Palabora-South Africa: underground mine

Nickel is mined the same way any other stuff is mined ie it is dug up out of the ground
What you dig up needs to have a relatively high nickel content but will also have other things which you may or may not want
Usually cobalt is found with nickel and this is fairly rare so is desirable but other things such as iron are a damn nuisance because iron is better to get from deposits which are higher in iron
What you are probably really after is how to extract nickel (and cobalt) from the ore dug up and to discard all the less valuable things
