What I do is hit the 1 key on my cell phone & hold it in. When I do that I haven't taken my eyes from the road but my voicemail is dialed and I can leave myself a voicemail that spells out the great idea so I won't forget it. Then I hang up.
Check your phone's instruction manual for tips on using single keys to do various things. Another one that works with almost all phones is the pound key (#). Hold it in to change back and forth between silent (vibrate) and ringer mode. Works really fast!!

I had a great idea today while driving...I thought about the fact that the smell of cinnamon helps people concentrate and then I wondered if you could buy car deodorizer things that smell like cinnamon....and while I was thinking about this I barely missed hitting a dear that ran across the road in front of me.

Carry a hand voice recorder (tape, digital what ever you can afford) and make sure you have the window up for you can tape just the wind.

Keep a notebook in your car, pull over when it's convenient to do so and write your really great idea in your notebook.

Turn on the hood light so that I have a light shining above my head, the universal sign that a person has just had a great idea.

link it to a word or situation that will help you remember & concentrate on the driving,too bad if you forget,at least you haven't crashed .
