I am a teacher who is looking to switch districts; is it acceptable for me to use a letter of reference dated 2005?

Perfectly acceptable. But why bother? Very few people are stupid enough to ask for a reference from someone who is likely to give them a bad reference. Even rarer are people stupid enough to risk a law suit by giving a bad reference.

It's perfectly fine. Employers like to see references for your two most recent jobs - at least.

i don't think it is unacceptable but if you can obtain a recent one i would do that instead
