I am almost done with my associates degree and I have looked into transfering to a 4 year university to complete my bachelors degree. The University of Phoenix allows you to take all of your classes online (which would be VERY beneficial to me). Is this a credible university, or will future employers laugh at me in my job interviews?

University of Phoenix is a popular school but they are quickly becoming a cash cow. They charge extraordinarilly high tuition for something employers might laugh at. Instead, try Thomas Edison State College, the website is www.tesc.edu. They are regoinally accredited and the classes are online. I got my BA from them and I'm attending a prestigous masters program.

As long as it is accredited and you complete your degree plan while the school is accredited then you have absolutely nothing to worry about.

I wouldn't trust any college that advertises on the television. Many colleges will allow you to take some, if not all, of your classes online. When you're looking around for a 4 year college, you can ask the admissions office if they offer that.
