Lol I think you got them all pretty much, at least all the major ones. What I know of so far are:
Dragonball:
Yaijarobe
The Ninja guy that Goku encounters while in the Muscle Tower of the Red Ribbon Army
Lots of unknown fighters have weapons such as swords, for example the big tigre Goku fights and saves Master Roshi's turtle and thne he gets a dragonbal as a reward and many more.
Also TaoPaiPai has a knife not a sword, and it happens during one of the Wold Tournaments.
Dragonball Z:
Mystical Gohan
Goku also tries the Z-Sword
Future Trunks
Dabura
Janemba
Tapion
Minosha (Tapion's Brother)
The Wizard that cut Hirudegand in two, he was the one that first wielded the sword
Dragonball GT:
Trunks
The Wild Pig from the TV Special has a sword

Who needs a sword when you have a gallat-gun? Ghoku had a stick and he did just fine. Oh yeah, Dabora does not have a sword.
