I live in Sandusky and have worked at Cedar Point and yes, in the station all seat belts are checked. Of course there is nothing really to stop you from unbuckling when you get out of the station. I think Top Thrill Dragster may have a computer system that can tell if you've unbuckled but most of the rides do not have that.
Cedar Point has also modified some of their seats for a more confining experience. Blue Streak for example used to have one bench seat with a shared seat belt and a pull down bar that really didn't hold you back. It was lots of fun to unbuckle and catch crazy amounts of air on the camelbacks. Now they have modified it so there are individual seats with individual belts and a more confining lap bar.

Yes, they're very good (and efficient) about that at Cedar Point.
Typically, what happens is that they have two workers doing this. One worker starts at the back of the train on, say, the right side and works forwards, checking everyone's seatbelt on the right-side seats.
The other worker starts at the front of the train on the left side and works backwards, checking the seats on the left.
They typically both finish at the same time, and give a thumbs up. The ride operator WILL NOT start the ride until both seat checkers give the thumbs up. It's very quick, and efficient.

In the 20 years that I have been visiting that park I have been checked every time. On rides such as Millennium Force you have to have at least an inch of extra seat belt showing once you have tightened it. They WILL make you get off............
Check out the forums on this website. The seatbelt rule was a pretty heated topic for discussion when it was put into effect.

Cedar Point being one of the biggest theme parks in the world, will definitely check your seat belts on a ride due to safety precautions so that no one will risk in injury or death. Its pretty obvious they want their visitors to live.
