My friends birthday is in a little bit, and I'm writing a story for her with some of the characters we like from different series. The problem is that she doesn't really follow the fandom anymore. I always try and give her something original, and I don't typically write. I just wanted to entertain her.

Is this just a waste of time?

Writing anything is never a waste of time. Even if you decide not to give it to her, keep writing it anyway!

Well I think being original is always a plus and you appear to have such a flair for creativity. Unfortunately the friend in question may have taken interest in other things. Try to follow the theme of your friendship now, not for what it was. Get her something only BF would know about the other.
