Two things came to mind when you said Mason jars.... miniature terrariums and hanging candle lanterns. Wind craft wire around the mouth of the jar, under the "threads" to form a handle to hang the jar, pour in some colored glass marbles ( the kind used to arrange flowers in vases ) and nestle a scented votive into the marbles. The wire handle can be embellished with glass beads or other metal embellishments such as pewter charms.

Well, if the terracotta pots are clean, I've seen them selling them in magazines with a dry bread mix included. You add egg/water/whatever and actually bake the bread in the terracotta pot.
As for the mason jars - make jam! I make jam all summer/fall and give them out as xmas gifts. Everyone loves them. Even if they don't eat jam in sandwiches, I tell them to use it as a glaze on a roast, chicken, etc.
I've also seen the mason jars half filled with buttons as a base, then a candle put into it. Tie a ribbon around the top - looks very country.
Hope this helps you with ideas!

I made "Journey Jars" for my family one year. I got the regular Maon jars and decorated them (label on the front, ribbons and such on the side with tags). I typed out questions in different fonts and then cut them into strips and put them in the jars. It was easy to just print the same questions over and over again!
This can be a great way to get to know each other better -- with silly and serious questions. Also, if they will give you the answers, you can use that to make a scrapbook for folks the next year. Or just one for yourself about the neat stories of your friends and family.

I'm not too certain about the terra cotta pots, but I've often seen candles made in mason jars
