I have known _______ both professionally and socially for ____ years. In all the time I have known and worked with her, she shows a genuine interest in the well being of her students. She treats each of her students like they were her own children putting their welfare and learning above all else.
Her class room is well organized. Her lesson plans are well thought out tailored to her students. She is innovative in tailoring her lesson plans to the abilities of her students to advance their learning.
She is also a sober person who never misses work unless it is an emergency.
She thoroughly enjoys the challenges and rewards of the classroom. She is always seeking new and better methods to teach her children. She works with each individual student making sure each individual student gets the time they need to learn the subject matter.

Why does she need so many letters? Anyway, since you don't know her that well, you can address the things you know: 1. Work ethic 2. Professionalism- shows up on time, dressed properly, conducts herself well, etc. 3. Interaction with students, staff and parents 4. Anything special about her? Volunteers for committees, shows up at student events, talks to parents, etc. These things should help in your letter of recommendation. Good luck.

It is really tough to help without knowing her. As a person who has read many letters of recommendation though, I'd suggest you mention characteristics such as understanding and liking children, knowledge of theories of how young children learn, good work ethic, being a team player, flexibility, ingenuity, integrity, energy and enthusiasm, creativity, patience, ability to adapt for children with various learning styles and for children with special needs, positive influence on staff morale, cooperative and willing to participate in school events, challenges and supports children in their learning, works well with parents, and ability to hold children's interest and entertain. I hope this is of some help.
