On track, I think I have to agree with another of the answerers. The all-time greatest moment in F1 has got to be Senna's mind-shattering bravery at Donington. His driving style in the rain has since become legendary. 5 cars overtaken in the first lap in treacherous conditions has to be an amazing feat.
And also the 1957 German Grand Prix. Fangio smashing the lap record of the Nordschleife to smithereens 10 times and making up an entire minute on the leaders to win ahead of Hawthorn. That was Fangio's last win in F1; it was one of the last races in 1957, and he retired at the start of the 1958 season.
Closer to the present, my favorite moment might be the finish of this year's Spanish GP, with the stylish zig-zag of Alonso with the marshals bowing. And also Fisichella's run from the pit lane to 5th place in Melbourne, while fighting all sorts of technical woes throughout the race (telemetry down, all kinds of problems with the tires, then half the race run with a broken clutch).
I don't have a favorite off-track moment, but I have seen one that cracks me up every time, with Montoya being hit on the head with a camera. In the pits... Schumacher and Coulthard almost getting into a fight after the crash in the rain at Spa in 1998.

Jim Clark! Tragically killed in a minor race, this guy was peerless. Graham Hill, Jackie Stewart, Jack Brabham, Denny Hulme, Bruce McLaren, Francios Cevert and Stirling Moss were amongst his closest rivals (to name but a few) back in the days of true heroes and Formula One's heyday. In my opinion the 60s were never bettered before and certainly not since. This was back in the days where Formula 1 drivers competed in other events during the same season. Jim Clark won in the 60s equivalent of Touring cars, "Saloon Car Racing" in the same season he won the Formula 1 World Championship. He is also the only driver ever to win a race having been lapped by the whole field due to an unscheduled pit-stop. Amazingly, he left the pits and overtook the whole field TWICE to win!!! -I am certain this is a feat never to be repeated. And remember, this was with a VERY competitive field, some of whom are considered amongst F1's greats. Other favourites from other eras: Nigel Mansell for his gutsy determination and tenacity. And Damon Hill for being the last true gentleman in the sport. He won with honour and believed the best in others, robbed because he did not expect the nasty tactics of his rival(s?)

The opening lap of the 1993 European Grand Prix at Donington. In dreadful conditions, Ayrton Senna started the race from fourth and almost immediately went to the front; he led the entire race, except the times he pitted for fuel and tires. He even set the fastest lap of the race and he did it while going through pit lane, on an aborted pit stop.
My favourite off-track moment was at the 1988 post-race press conference for the Portuguese Grand Prix at Estoril. Alain Prose won the race, with Ivan Capelli second. At the press conference, Capelli continually referred to Prost as Mr. Prost. With his heavily-accented English, it sounded really funny and nobody was sure if he was being overly respectful to Prost or if he was just having a little fun.
Standing on the outside of Eau Roug at Spa-Francorchamps during Saturday morning practice for 1989 Belgian Brand Prix and watching Ayrton Senna in a McLaren-Honda go through the corner on full throttle; absolutely awesome.

Following the Friday and Saturday practice sessions and Quali, speculating on teams' strategies, fuel loads, tyre choice, the weather, being able to recite the Quali times of top few drivers to anyone who cares to listen (down to two decimal places), waking up in the middle of the night to catch the race on TV, watch the first lap melee, seeing the race unfold as I had predicted (or not), and watching my favourite driver/team nail the opposition with the killer pitstop or overtaking moves. I like the controversies, the gossips, the politics, the business and technical aspects. Can't get enough of F1. Bring on 2007! I should be receiving my tickets in the mail (for Melbourne GP) anytime now.....

Kimi Raikkonnen's otherworldly race in Suzuka last season when he came from a PIT ROW start to win. He was pulling laps in the 1:29 range, and after spending HOURS on Gran Turismo 4 (for comparison) the best I could get was a 1:38! It was unbelievable!
It's also why I think Kimi is going to kick some serious butt in a Ferrari nest season.

Tough one. There's been some classic battles with Giles Villenueve, however my most memorable is Ayrton Senna's untimely exit from the sport. I know it shouldn't be considered a favourite, but let's face it, seeing that accident and the shocking aftermath will never be forgotten by anyone who witnesses it. It still sends shivers down my spine and gives me goosebumps when I see it. SENNA was the greatest; Shuey was good, no doubt, but as an ambassador for fair sportsmanship, he's at the bottom of the heap.

1995 Belgian GP in the rain doing battle with Damon Hill. It was the best racing I've ever seen because Schumacher was on slicks and holding off Damon Hill who had wet tires on. I was on the edge of my seat until Schumi eventually had an excursion.
Watch this. When you watch, you will understand just how much pure talent Schumi had, this footage should end all arguments.

When Schummi retired after the Interlagos race. Truly a sad moment. I think there isn't anyone like Schummi, not even Alonso though he won this time.
Schummi is a real fighter, always gives more than 100% even in his last race where he went back to the last place and finished at 5th. It was phenomenal. Long live Schummi!!

Schumacher won 12 races of first 13. This is not so easy to achieve. The last race of his career when he overcomed many problems & drove his car past Kimi.
Alonso taking consecutive two titles.
