Olympus makes a series of digital recorders, smaller than a typical cellphone, that has a USB plug at the bottom. Record up to its capacity (up to 480 hours, depending on quality selected and amount of onboard memory), then connect up and download the contents. You can use the internal or external mic.

You can do it with anything which records. Then whatever you recorded on hook it up to your pc using a wire with a 3.5 mm jack on either end. Use something like widows sound recorder to record. Goldwave is pretty good to (http://www.goldwave.com)
