My wife and i want to have our last named changed for privacy reasons. We are being bothered by an ex-family memeber, because they keep tracking us using our last name. By law, can we some how have our last name changed? And if so, how? Do we get to pick our new last name? Or, can we just changed our last name to my wife's maiden name? Does it cost money, and how much?

Both of the above answers are correct.

The process is fairly simple in most states. You go down to either the local county courthouse, or the county clerk's office. There will be a standard form to fill out, and you'll need to provide ID and probably a copy of your original birth certificate. The fees vary, but are usually under $100 and some states are as low as $25.

Some states require you to speak to a judge who approves the change, but not all states do. Once your application is approved, you get an official notice of the change in a few weeks. After that, you need to update your drivers license, birth certificate, etc., all with the appropriate agencies.

Yes, you can have your name changed legally. You can either pick a new last name or you can change it to your wife's maiden name. I'm sorry that you have to go through this due to a single person. Even though...it could be fun, picking a new last name. Sounds strange, but that's just my opinion.

You can change your last name, it usually does cost some amount of money. The laws and fees vary by state. I would suggest checking your state's web site. In my state you must appear in court to certify that you aren't changing your name to avoid any type of legal trouble.
