What is the name that describes the eating behaviors of formally impoverished cultures and sub-cultures?

In many oriental cultures people continue to eat fish heads even though they could afford the whole fish. In American black culture people eat pigs feet even though they could afford to eat pork chops...or the gut of an animal when they could afford to eat a roast. These people express eating these foods as a preference ....there is a name for this phenomenon and it is .....?
