really as unstable as they make out in the movies or is it just an excuse to show an action movie explosion

Yes, it is unstable, but dynamte, invented by Nobel is very stable, and miners would warm it up on an open fire before using it to mine with.

Most modern explosives are very nasty stuff mixed into an asorbant fibers, like cordite - mixed with cotton - so they can be handled safely.

but it does not explode with so much flames, Hollywood likes to use petrol vapour for effect, the real thing is quite boring to film.
