In general, you just need the appropriate fonts, which may already be installed.

In Firefox, look under View / Character Encoding.
In Internet Explorer, look under View / Encoding.

Make sure one of the Chinese encoding is selected, or AUTO is selected. The browser may ask you to go download some fonts or such, let it, then restart the browser when complete, and you should be able to read those websites.

I just checked Baidu.com and I have no problem looking at it with Firefox 1.5.0.8 or IE 6.

If you have FireFox, search for language pack plugin extention on mozilla.com and you should be able to select the language for the site.
