I gained some weight and now my jacket doesnt fit me as well, can it be altered so it won't be as tight on me?

try going to a tailor or seamstress and see if they can let out the seams a little bit

I can't say for sure for a few reasons (I have very little sewing experience, I can't see your jacket, etc.)... HOWEVER... I think this depends on the jacket. What you want to look at is the material and the seams.

If the material is something like leather where sewing causes permanent punctured holes, you might not want to "let the fabric out" to form new seams as these holes will be visiable.

As for the "seams" part of my answer... see if there is extra fabric after the seams. There is usually at least a small amount such that the thread can hold the material together and not unravel, but unfortunately there probably isn't a lot, unlike most fabric (non-demin) pants (where I'm drawing my experience from). If there is extra fabric inside the seams that you want to loosen, and you don't mind previous puncture holes (or their won't be any) upone re-forming the seams, go for it! For me, when I had some pants' length "let out", the sewing "holes" from the previous "seam" went away after being washed.

Then again, I don't know that your jacket is machine washable... go to a professional to find out for sure. Or you could go another school of thought and ADD new fabric and go for some sort of a boho pippy longstocking look (shrug).

You can only let out a garmet as much as the seam allowance..there is usually only 1/2" to work with so, each side will allow only approx 1/4"

It could, but it may cost you the same amount that you spend on buying a new one. So buy a new one instead.
