The meaning of the Hebrew word "gopher" is unknown; most translations of Genesis simply don't attempt to translate it. The type of wood that it's generally thought to mean is cypress wood. There's also some thought that "gopher" doesn't refer to the type of wood at all, but was in fact mis-transcribed at some point from the Hebrew "kopher" ( the letters that sound like "g" and "k" in Hebrew are VERY similarly-shaped), which means "pitch," as in tar. That would have meant that Noah was instructed to build the ark out of wood treated with pitch, which makes sense for a vessel that was intended to be waterproof.
