It is about as "long as people have existed."
By this I mean...prejudice against any group goes back to the beginning of time.
If you mean how can you measure prejudice in length of time, it is as long as a person remains ignorant.
If you mean how deep does it go, as deep as a persons ignorance goes.
If you are trying to measure it by a group of people..you cannot...one group does not necessarily entipify the feelings of ALL people.
Or if you are talking actual literature..."When you let go of your pride...no prejudice will exist."

Easy, once you define prejudice.
Frankly there is prejudice of race, age, weight, religion, intelligence ... certainly lots more than just race. Pick anyone who lives in a homogeneous community. Find out how many friends they have. How many of their friends are from different categories above? My guess is that there are lots or prejudices that exceed racial prejudice. I think you will also find that racial prejudice isn't always in the stereotypical direction.
Like all those tall people that sing "Short people got no reason to live!"

I am curious as to why one would want to measure prejudice - for this is akin to wanting to weigh faeces.
However, one suggestions is that you may be able to do it with a "scale of judicious measure".
