While I'm driving the car will turn off suddenly, the RMP meter and the spedometer will immediatelly drop. After that, I would have to let the car sit for about a minute and then it will start back up.

Without knowing what kind of car it is, the fact that the speedo and tach both go to zero while the car is still rolling suggests a loss of power. The first thing to check is your battery cables. I just replaced one on a 96 suburban that had the same syptoms. The positive cable to the starter was fine, the other one that feeds the main fuse and relay center was badly corroded at the battery end inside the red plastic cover. This is often caused by the battery leaking acid around the positive lug. I've seen this many times on GM vehicles with factory batteries.

This is puzzling. the RPM could drop almost immediately if an auto - but if manual, the intertia of the car should "carry the engine" so rpm will fall gradually.

Ditto MPH - unless you are going up a very stepp hill, speed should fall of fairly gently - not immediate

Is it always after XX minutes driving or might it be fine tomorrow for hours - and then fail after 5 minutes tomorrow?

Fuel starvation or overheating coil / coilpack might be possibilities, hard to see what else i likely to be intermittent.

Does it play up more in cold weather / hot weather / long jounreys ? short jhourneys?

Any odd noises coming from anywhere?

Lets have a few clues here (just edit your question and pop them in)

I own an auto salvage yard but not knowing what kind of car this is makes it hard to answer this question. It could be anything from and electrical problem or something in the fuel system, or even a drop in oil pressure.

Its not much of an information like, was your car making a funny noise on the engine like knocking? Anyway, my first guess was either your fuel pump are getting bad or fuel filter are clogged and not enough fuel could be getting to the engine. Replace the fuel filter first, its cheaper then have your mechanic or DIY to check the fuel pump pressure.

i own a repair shop, and any interruption in the fuel circuit will cause this such as a fuel pump relay kicking out on it from a heat condition,or a bad ground will also do it,there are a lot of things that can cause it,you need to take it by any auto zone ,and have them scan it and see if it left any trouble codes in the computer ,if it did this will help you determine the cause of it,,good luck,i hope this help,s.

My car did that to me when the fuel pump was going out. I would be on the Highway and it would just stop running. It usually stated up again until the fuel pump died. Which took about 4 days.
