the cast passages that guide air/fuel to and from the valves are called ports, when the size of these is increased by grinding we "port " the head , polishing is just that , knocking off the lumps and rough spots in the port and leaving behind a shiny surface, port matching is when the ports are ground to match the runners coming from the intake manifold , which can also be ported and polished , this is all done to improve airflow and is an important part of blueprinting an engine, if we just have at the ports with a die grinder we could actually have a negative effect on airflow , that is why it is best done by an experienced shop with a flow bench .

if you look at your cylinder head you will see the tunnels that run down to the valves. these are the ports. To improve performance ,often theses ports are grounded to match the opening on the intake and or exhaust manifold.So you end up with a more rectangular opening as apposed to a oval . This improves the flow of gas and air to the cylinder, and thus more power. Now the polish part is just as it sounds , if you were to stick your finger down a port t would be bumpy and rough. So the ports are smoothed and polished to decrease resistance and improve again flow.

best rule of thumb is 85%,meaning only open port to 85% of the diameter of the valve. take special care around the stem,you should be able to get a book on this project.also make sure to trim any excess gasket material to match the new port sizes,dont forget to do the manifoldsand be prepaired to re-adjust and possibly re-jet the carburator.good luck.

consider using a trapazoid shape when porting, better midrange responce without scacraficing strength, not really a undertaking for the inexperienced, unless you have lots of heads to waste

Port is when they regrind the angle of the valves and the polish is when they shine the whole area up.
