How will they know what to charge for the over stay?

thru the embarkation card that u filled up upon entry, the immigation officers gets the form and stamps ur passport of ur arrival date

When you enter a foreign country, you normally complete (fill) an arrival form and present it together with your passport to the Immigration Officer. He/She will stamp both your passport and the arrival form. Your passport will be returned to you but the Immigration Officer will keep the arrival form for their records. They will definitely know how long you have been in their country. When in a foreign country (land) the best policy is NEVER LIE TO THE IMMIGRATION OFFICIALS.

When you entered the country, you would have gone through customs in most cases, and been noted. If you need to prove you haven't been there very long for some reason, the airlines or ferries should have a record of your transit.

But it's a pretty sure bet that they'll know. Best to just pay up if they've got the date right.

They have the record of your arrival in the country through the Embarkation card that you filled up and present to the immigration upon arrival at the airport of destination.

They have records when you applied for it, when you go through customs.

In US, if no one checks, you can stay as long as you like.

They have other records of your arrival other than your passport...

if you have you receipts from you transportation fees, plane, bus, taxi, or rental cars. they have dates on them.
