Tell your parents calmly (no yelling, no stomping, no tantrum), "Mom, Dad - I really don't want to play volleyball. Tell you what: when a sport comes along that grabs me, I'll let you know, and we can enjoy it together, ok?"

I play volleyball (intramural for college) and I love it! Volleyball is a very fun sport. But if you really don't want to play, then just tell your parents how you feel and I'm sure they will understand. It's really fun though, I think you should try it! :)
