Restaurant kitchen work.

You have to juggle 20 things at once, always keeping a plethora of things on your mental back burner -- check pies in 20 minutes, check fish in 12 minutes, check convection oven in 10 minutes, special orders on 5 items, here's the delivery man, help unload stuff for an hour and get farther behind, and then clean up the place like a wrecking crew at the end of the night. They definitely don't get their due. It takes an incredible, burnout level of in-the-moment thinking.

Teaching. Teachers are taking on a heavy load. Most times they have to be role models, mom, dad, counselor, friend, etc. With most of the things happening in schools these days they end up being a hostage nagociator, police, fire fighter, security, administrative assistant and more. Dealing with strick education rules. Expected to educate every student with no help from parents or gardians. All while making sure children receive quality education. I tip my hat to those who teach. From pre-school to college.

I would say any job that commits their life to helping others. Military (thank you vets, and Semper Fi Marine Corp birthday!), police (yes, even though they give tickets), firemen, EMT, teachers, doctors (all kinds, even the psychologists that keep people sane), and the list can go on.
