Square feet is determined by multiplying length by width. (To find the cubic feet, multiply that by the depth.)
With your pool deck you have to do many smaller measurements and calculations and then add them up. Section off an area, measure that and record it. Go to another area, measure and figure that, etc. When done add all toghter. If your pool is a retangle and the deck is as well, this will be easy. If you have many curves, then the job is harder.

Assuming the pool is a rectangle and the pool deck is a larger rectangle.
Length of pool: let's say 100 feet
Width of pool: let's say 50 feet
Length of pool deck: 200 feet (still making this up)
Width of pool deck: 100 feet.
Square meters in whole area: 200 * 100 = 20000 square feet
Square meters of pool: 100 * 50 = 5000 square feet
Square meters of pool deck=square meters of area minus square meters of pool=20000-5000=15000 square feet.
