I am pretty sure that 'Audacity' (download.com) will do this...I know you can use it to convert analogue to digital, and it looks like you can add extra tracks. The tricky thing will be whether you can hear the instrumental whilst recording the vocal, but I think this may be possible (in settings). Once you have imported your instrumental, you should be able to plug a microphone into your sound card and set up audacity to 'hear' your mic. At this point you will need to plug headphones into your soundcard and try it out....The software is pretty easy to use with big buttons for 'record', 'stop', 'play' etc.. you will need to edit the preferences to set your volume control for your microphone input. You should be able to apply an echo effect to your vocal afterwards, just to make it sound a bit more professional!
As I say I haven't actually tried this, but believe that it should be possible.
