As stated in some responses by example, it's finger food and lighter fare for lunch. Generally, the food is easy to eat, balance on your knee :), is less likely to cause you to doze in an hour or so and doesn't require a lot of utensils.

For example, at seminars and full-day meetings, lunch is quick, buffet style and almost impossible to spill!
