Our sheep are all numbered. When I notice a missing number, by checking my records I can tell who it is, and assign her a new number immediately.

Some ear tag systems are better than others. Plastic ear tags that hang down and catch on fences and stuff are no good. Find a tag system that fits entirely in the ear. It's less likely to get caught on something and tear out.

Ear tags (wont work on poultry)
Branding iron

Prize winning cattle can be noseprinted (like a fingerprint but on the nose)
