It is polite to write to inform them, but keep it simple and polite. Explain that you have had a better offer and thank them for their offer and time.
Don't feel guilty. They wouldn't if the roles were reversed.

It's too late to send a letter now. You need to call them up and explain the situation and apologise for any inconvenience caused.
Follow this up with a brief letter confirming the offer rejection with reasons.
Do this now - they might have had a second choice candidate - you might just make their weekend.

Just make sure it is better than the one you are about to turn down, and yeah if it is what you want just phone them and tell them that unfortunately you have had a better offer and you apologise for an inconvenience that you may have caused them. It also depends on, if you have not signed any agreement with that company as yet. So be careful.

It's very late notice of course and I don't think it matters how you say it they wont be thrilled about it. However, you have to do what is right for you. Just tell them straight a much better job has been offered to you and that you must accept it. Any reasonable person should understand that is the right move for you. Be truthful about it and remember, businesses only ever do what is right for them so you shouldn't feel guilty about doing what is right for you!

Tell them politely that your circumstances have changed and unfortunately you will be not be pursuing their job offer. I agree with the person above, you should do it as a phone call and then confirm in a letter, although be careful if you have already signed something!!
