the problem i have with this question is that pretty much the only people who will answer it haven't played any of the good FFs. myself, the only two that i haven't played are III (as it's not out til next week...) and X2 (which i hear is quite fun, even if it's not that great an FF)
Final Fantasy IV had a solid storyline, for one thing. each person was personally affected by the enemy, and had a reason for joining your team.
your characters were set into solid classes, from which they could not change. yea, guess what, not everyone can cast cure, you'll have to find another way around that!
it involved thought. sometimes you need to actually think about where you're going, or why. the dark elf's cave? genius not letting you wear metal! how to get there? use actual clues to get there. you just found out about black chocobos... and there is a forest nearby... etc.

Most of the answers you will get will say Final Fantasy 7. It was a revolutionary title in the series... it kicked it up a notch by introducing not only a 3-D world, but a real-time battle system as well. All of the games that have followed it so far (aside from X with its completely turn-based combat system) have followed suit.

The original Final Fantasy without which none of the others would ever have been made. I still play it to this day on my NES

I'd have to say FF3, with FF7 coming in a close second. I think FF3 had a great storyline and solid gameplay.
