The best answer is, "Because it wasn't in the script." If you overthink Star Wars, or any movie for that matter, you're going to get yourself hung up on issues that don't really matter. What's important to focus on is the story of Anakin's decent into the Dark Side and his eventual redemption. Its fun to ponder parts that don't make sense sometimes, like why the gunship in Ep 1 suddenly didn't have any weapons to shoot down Count Dooku, but don't let minor plot holes detract from the story.
