The Confederate Forces held Vicksburg and the bluff over looked the Mississippi River, Giving Confederate gunners clear view and making any boats going up and down the Mississippi easy targets.
Also long as the Confederate Forces held Vicksburg the union steam boats had to run the Confederate guns (artillery) which essentially blocked union shipping of war materials up and down the Mississippi.
By taking Vicksburg the union forces had clear unopposed shipping up and down the length of the Mississippi allowing faster deployment of troops and supplies than going over land.
By taking Vicksburg which was the last Confederate stronghold on the Mississippi it also effectively cut the Confederacy in half.
With the union controlling the Mississippi the Confederates could not get men and supplies across the Mississippi from the Confederate states on the west side of the Mississippi to reinforce and resupply the Confederate troops on the east side of the Mississippi severely hampering the Confederate war effort.
None could the Confederate forces retreat west across the Mississippi.
In summary: Two factors for the importance of Vicksburg:
1: It cut the Confederacy in half economically and militarily
2: It gave the union clear unopposed access to the Mississippi River.

Vicksburg, perched on a steep bluff along the eastern bank of the Mississippi River, was one of the main Southern strongholds along the river. It was therefore of strategic importance to both the North and South. In February 1862 the Union captured Fort Donelson in northern Tennessee, which broke the Confederate first line of defense for the Mississippi Valley. Vicksburg then remained the one serious obstacle to federal command of the Mississippi River. Union control of the Mississippi meant the Confederacy would be split in two.
