I don't want to just throw in the garbage!

If you have kids: Cut up the pumpkin just enough to fit in a jar. (Plastic is better because the gases might cause a glass jar to explode.) Watch the pumpkin rot. If you let this go on for months, it will eventually turn into a thick, black liquid. Totally disgusting, which the kids will love.
OR
bury the rotted pumpking and mark the site. In the spring keep a watch on the area to see if something is growing. Believe it or not, sometimes it does!
OR
Rototill it into your garden.
OR
Fill it with various food items like Bird Seed, Nuts, small pieces of fruit, etc and set outside for the wildlife to have a delicious smorgassboard of yummies. You'll get a great chance to photograph deer, raccoons and other interesting critters. :-)

Throw it under a large evergreen tree or shrub . Animals will eat what they can from it and the rest will rot into the soil.
