Well for one they were pioneers...they wrestled day after day in front of fans for years and honed their "in ring charisma". Honestly most of the people on the list you have became really popular by being hated, and hated very intensly....but it was a character.
Dusty Rhodes was basically the first popular wigger wrestler, your John Cena of the 70's and 80's, he acted like the soul brother cool cat kinda like the mowtown homies did back then.
Roddy Piper did it with intesity and true grit, and on top of it all he started out when he was 14...plus he was smart, his on the mic skill truly unmatched by even the best.
Jimmy Snuka was skilled at making the crowd go "hey look at that guy", and "holy ****, did you just see that?". He was basically a half naked man, in his bare feet chopping people and doing the occaisional wrestling move.....but what made him famous was doing a frog splash from the top of a cage.
Sgt. Slaughter was a real american hero...I mean he has his own G.I. Joe for god sakes, than he joined up with the enemy...more on that.......
Iron Sheik basically made Sgt. Slaughter famous beacause he was representing the terrorist treat back then, like muhammad hassan, then after feuding Mr. U.S.A. and mr. anti-america....sgt. slaughter joined up with the Iron Sheik....and this cemented history....they became the most hated two people in wrestling...and they also launched the career of "I am a real american...", yes...it took the immortal hulk hogan to take dosn the terrorist threat invading the wwe.
and we all know hulk hogan is more popular than even the wwe itself....maybe.

well its a very long story but i might be able to give you the short version jimmy snuka (superfly) he was one of the first if not the first to do a flying move off the top of the cage sgt slaughter and the iron sheik were popular because they had some epic battles during a time of great unrest in the middle east sarge for being a good guy the sheik for being.............well a sheik dusty rohdes was popular because of his charisma and the bloody battles between him and the four horsemen (ric flair ole anderson arn anderson tully blanchard) hot rod was not a popular wrestler but a popular character he was mean but he got beaten up a lot (hogan sarge macho man big john stud) if a wrestler needed to be "put over" he would have a rivalry with piper and eventually beat him so the fans would like the new guy

Many reasons. They all had a different look, for one thing. Today's wrestlers are so cookie-cutter that it's hard for someone to be as memorable as a Dusty or an Iron Sheik.
Plus, they could all cut a great promo which went a long way back then. The stuff these guys came up with on the stick was funny and clever and unscripted. All of their promos were meant to entertain but also to build up long, memorable feuds and not just that night's tv main event. Just about every move made or word spoken by any of these guys meant something.
I really miss those days, great gimmicks all of them.

They had what the wrestlers of today either lack or not allowed to do. These guys had charisma they knew how to do a promo they knew how to get the crowd to pay attention to them. Back then they where allowed to do a unscripted promo & interview not like the WWE today which gives these guys scripts & told what to say(With the exception of Foley & one or two others maybe HHH) Also back then they where able to do a match & where allowed to pace the match on their own. I suggest if you can to get some dvd or vhs tapes of those matches back then & watch them. You will see the difference.

they were just bad ***, I remember when Roddy Piper jumped in the crowd and started kicking ***, you can not tell me that was not real, someone stabbed Piper in the stands that night, that was when wrestling was great, i do not even whatch that crap they have out today. Vince McMahon has gone so corporate that it is no fun to watch it anymore.

back then wrestling wasn't staged like it is today. these guys you named would take on any challenger, at any time, no matter how big or how bad they didn't care, they fouhgt with dignity, something wrestlers today no nothing about. they didn't have to cheat to win a match. They were man enough to back up what they said with fistacuffs. not chairs, ladders, and tables, brass nucks, etc, etc.
