I put one in a pot of boiling water as a test to see if it opens. But what does one LOOK LIKE when it is open?

The little silver disc in the center will pull away from the outer base.

When it is dry and room temp look at the thermostat. The center of the thermostate moves up when open (hot) and down when cool. When they go bad they can stick open or closed. Open means your heater or a/c might not work at it's normal rate, but if it sticks closed you will soon be stopping (with a over-heating car)
on the side of the road. Also, if you replace the thermostat, also replace the gasket.
