Well you need a conversion program to convert any video format into the required format for itunes to recognize (mp4). Try looking at Cucusoft, google it. Then google "Easy DVD Rip", it rips DVD into mpg, avi or wmv, then convert the files into mp4 using the Cucusoft software. Both are not free, but it's worth it.
After full conversion into the required mp4 file, drag it into your itunes library and then into your ipod. Before dragging it into your ipod, you could label the file either music video or movie.
I have these two programs, they are very easy to use and very helpfull.

the previous answer is correct, but there are free programs too. dvd decrypter and videora ipod converter work well together. in decrypter, change the mode to IFO and go to setting, the IFO tab, and change file splitting to none. decrypt it and open videora ipod converter(not just videora, it must be the ipod one). and process it, its pretty easy. its free, dont be pulled into buying one
