What do you see?
subject--you (the subject 'does' the verb)
verb--do see (need the do because of English question formation)
what--direct object--an interrogative pronoun which will stand for whatever is seen.
This is clearer if you restate it as a statement with a noun for 'what'.
You see the tree. (subject you, verb see, d.o. the tree)

'what' is a pronoun in this sentence and I an sure that you are aware that pronouns can be the subject of a sentence (just as with, he, she, etc.)

'do...see' is a compound verb. (one comprising two or more words).

'you' is the object (predicate)

The verb 'do' is placed BEFORE the predicate 'you' as is the case with all questions. ( Are you, Can she, etc.)
This is called verb/subject inversion)

Not sure what your exact question is? If you are referring to "What do you see?" for subject, predicate, etc. -- YOU = subject, "DO SEE WHAT" = predicate; DO SEE = verb WHAT = DO; YOU = Subject (pronoun).
