By definition, and infinite universe can't expand. Infinity plus one is still infinity.
When scientists talk about an expanding universe they are relying on Hubble's work calculating the red shift of distant objects, which seems to indicate everything is moving away from everything else. There are other explanations that can account for the observed red shift.
So you'll have to pick your belief, either you believe in an expanding universe or an infinite one, but those two concepts are mutually exclusive.

Picture it like this.
Take an uninflated balloon and draw two dots on it. Now, as you begin to inflate the balloon, the dots move further and further away from each other.
So, imagine you live inside the balloon. If you move along the inside surface of the balloon, it is effectively infinite, especially if you can only move in two dimensions. Yet, the balloon is still expanding. Those two dots are still moving further and further apart.
And what is the balloon expanding into, if you live on the surface and you can only understand the world in two dimensions? Nothingness. There is no other side to the balloon.
Check out Carl Sagan's Cosmos television show, or the works of Stephen Hawking. Either of them can explain it much better than I.

The infinite nature of the universe makes most people think that it "takes up all the space". That's not really how it works.
Space and time are the universe, and the universe is infinite in nature because it has no end or definite center.
Of course, you can find cosmologists now claiming that the universe is not infinite.

My theory is that the Universe is not infinite as it had a beginning, but that our Universe is expanding into an infinite nothingness.

I've asked myself that as well! I don't think our minds can grasp infinite. Somehow, it may be like the M theory says and there are many dimensions to expand in to

before big bang it was nothing so the universe should expand in "the big nothing".....and if you think about the definition of the universe = a single side.....that could give you the answer.....do you think that the extremity of the universe is a n-sphere?

Empty space. Its hard to explain but its just like a vacume packed area with no molecules in it reaching out infinetly.
