Do they normally come out at night?
I once saw one in the day-time, but which do they like more?
Im guessing night.

Night time especially around trash cans and anywhere there is open feeders such as dog food or cat food outside.

Racoons are nocturnal meaning they sleep during the day and come out at night. You mentioned you saw one during the day, that might be due to it having rabies. Usually animals that are nocturnal and that are out during the day mean they have a disease or rabies.

about 11 at night to 1 in the morning come around my house every night around that time

Yes they normally come out at night unless they're hungry or something.
